Jalapeño Cheese Corn Bread Muffins


The kids love my jalapeño cheese corn bread.

So tonight I combined the two 
and used my jalapeño cheese corn bread recipe,
but made it into muffins.

Best of both worlds. 
They came out great.  
I baked them at 400 for 20 minutes,
and added a cute little jalapeño on top of each one. :-)

Buttermilk Biscuits


2 cups flour
1 tablespoon sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
3/4 cup buttermilk
extra butter


Preheat oven to 450.
Combine flour, sugar, baking powder, and salt.
Cut in butter.
Add buttermilk and stir just until combined.
Cut out biscuits and place on parchment lined cookie sheet.
Bake 12 minutes or until golden brown.
Spread tops with melted butter.

~Red Velvet Cookies~


I was out of town for soccer all day yesterday and didn't get to do any Valentine's Day baking.


So this afternoon, I made some red velvet cookies for the youth devotional we're hosing this evening.


I don't think the kids will care that Valentine's Day is over! ;-)


I used this recipe.


I didn't have any cream cheese, so instead of icing I just did three types of sprinkles.

The cookies are really soft and taste just like red velvet cake. :-)

Blackened Chicken


Out of the park, home run hit with this one tonight.
The family loved, loved, loved this.
It is SPI-CY, but oh so delicious.

You will need -

2 tablespoon butter
 4 chicken breasts
2 tablespoons smoked paprika
1 teaspoon salt
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 teaspoon oregano

Combine spices and coat chicken breasts.
Melt butter in large skillet.
Add chicken to skillet and brown nicely on both sides over high heat.
Lower heat, cover skillet, and continue to cook until chicken is done, about 10 - 15 minutes.

The first egg was laid today from my youngest flock of chickens.
And, since it was white, I knew that it was from my first leghorn to raise.
It was in the nesting box and I was so excited to find it!

I love having chickens. :-)

Sunshine on my shoulders makes me happy!


Boy, I was humming this old John Denver song pretty much all day Saturday and Sunday!
We had the most beautiful weekend,
and I spent as much time outside as possible.


The animals were also happy to see the sunshine.
It's been cold, rainy and cloudy for weeks on end now
and a warm, sunny weekend was such a treat!


I did some work in the chicken yard.


Johnny Cash, my daughter's stock show pig, is looking good.


The kitties loved laying in the sun all day!



And I spent several hours taking care of this sad mess!
I planted early spring plants last February,
but then after the car accident, I never got to plant anything later in the spring
like I usually do.
For almost a year, my garden beds have been sadly neglected.



That, my friends, is the result of a lot of work!
But, oh the satisfaction. :-)


I weeded four of my six beds before I tuckered out.


I plated one bag of seed potatoes,


three onion sets,


carrots and radises, 


and one whole bed of salad greens. :-)
I'll weed the other two beds soon.
They're reserved for herbs and tomatoes.


I had plenty of company while I worked.


Oh, how I love my Daisy girl. 
Man's best friend indeed. :-)

The chickens are 6 months old!


My second flock of chickens are six months old today. 
Here I am with my Rhode Island Red - Dottie West. 


This is Crystal Gayle.  She's a Golden Laced Wyandotte.


And this is Jessi Coulter, a Silver Laced Wyandotte.
You might remember my last Wyandotte - "she" turned out to be a rooster!


Anne Murray is my first White Leghorn to raise.  
She will lay white eggs.  
I've only had brown and blue/green egg layers in the past. 


I think my favorite new breed is my Welsummer, Charly McClain.
The rooster version of the Welsummer is the very recognizable chicken 
on the Kellogg's Corn Flakes box. ;-)

Now, I'm ready for eggs to be in plentiful supply around here again. :-)
